Avocado Toast with Soy-Glazed Mushrooms
This simple yet flavorful toast combines creamy avocado with savory, umami-rich soy-glazed mushrooms for a satisfying meal. Perfect for a quick breakfast, lunch, or light dinner, this dish is both nourishing and packed with depth of flavor. The buttery avocado balances the rich, caramelized mushrooms, while a sprinkle of fresh herbs or sesame seeds adds the perfect finishing touch. Serve it on rustic sourdough or whole-grain bread for extra texture and heartiness.
Ingredients:
Bread 4 slices, toasted
Acovado 1
Mushrooms 12 oz
Oil 2 tbsp
Soy Sauce 2 tbsp
Fresh Parsley 1 tbsp
Green Onion, 1 tbsp thinly sliced
Salt, pepper to taste
- Slice fresh mushrooms onto bite size. I usually cook with mushrooms that are available at local grocery store. Recently Trader Joes started selling wild mushrooms like Oyster and Brown Beech.
- Heat oil in the skillet till medium hot and add mushrooms. Cook mushrooms, stirring frequently until all water evaporates and they start brown a little.
- Add soy sauce, mix well. Cook for an additional minute.
- Add salt and pepper to taste. Be careful not to over salt mushrooms, since soy sauce is high on salt as well.
- To assemble the toast: smash 1/4 of avocado on toasted bread, add spoonful of mushrooms, sprinkle fresh parsley and green onion.
