This fresh and vibrant salad is light yet satisfying, combining fluffy quinoa with juicy tomatoes, crisp onions, protein packed chickpea and fragrant parsley. A simple dressing of olive oil and lemon juice enhances the natural flavors, making this a refreshing and nutritious dish. Perfect as a side or a light meal!
Ingredients:
- 1 cup cooked quinoa
- 2 medium tomatoes
- 1 can chickpea
- 1 small sweet onion
- 1/2 cup fresh parsley, chopped
- 1 lemon, juiced
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Cook the Grain: Prepare quinoa according to the package instructions. Let it cool slightly.
- Prepare the Vegetables: Cut tomatoes in half, remove the seeds, and dice. Dice the onion and finely chop the parsley.
- Mix Everything: In a large bowl, combine the quinoa, drained chickpea, diced tomatoes, onions, and parsley.
- Dress the Salad: Drizzle with olive oil and fresh lemon juice. Season with salt and pepper to taste.
- Serve & Enjoy: Toss well and serve immediately or chill for a refreshing salad.
