Chopped Thai salad 🥗 Crisp, colorful vegetables t Chopped Thai salad 🥗
 Crisp, colorful vegetables tossed with hearty rice, golden baked tofu, and a creamy, slightly spicy peanut dressing. Perfect as a light dinner or meal-prep lunch.

🥕 Ingredients
For the Salad
* 2 cups shredded purple cabbage
* 1 cup cooked brown rice (cooled)
* 1 cup baked tofu, sliced or cubed
* 1 red bell pepper, thinly sliced
* 1 cup shredded carrots
* ½ cup diced cucumber
* ¼ cup chopped red onion
* ¼ cup sliced green onions
* ¼ cup chopped fresh cilantro

For the Baked Tofu
* 1 block (14 oz) extra-firm tofu, pressed
* 1–2 tbsp soy sauce or tamari
* 1 tsp sesame oil 
* 1 tsp maple syrup
* ½ tsp garlic powder
* ½ tsp black pepper

🥜 Creamy Peanut Dressing
* ¼ cup natural peanut butter
* 1 tbsp soy sauce or tamari
* 1 tbsp lime juice (fresh)
* 1 tsp maple syrup or honey
* 1 tsp sriracha (optional)
* 1–2 tbsp warm water (to thin)
* 1 small garlic clove, minced

🔥 Instructions
1. Bake the Tofu
1. Preheat oven to 400°F.
2. Slice tofu into triangles or cubes.
3. Toss with soy sauce, sesame oil,maple syrup, garlic powder, and pepper.
4. Arrange on parchment-lined baking sheet.
5. Bake 25–30 minutes, flipping halfway, until golden.

2. Make the Dressing
Whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha, and garlic. Add warm water a little at a time until smooth and pourable.

3. Assemble the Salad
In a large bowl combine:
* Cabbage
* Rice
* Bell pepper
* Carrots
* Cucumber
* Red onion
* Green onion
* Cilantro
Top with baked tofu and drizzle generously with peanut dressing.
Toss just before serving.

Bright, juicy, and full of flavor — this simple salad comes together in minutes and works beautifully for both regular days *and* fasting days.

**Ingredients:**
• Sweet corn ( grilled, broiled or roasted)
• Cherry tomatoes
• Green pepper
• Fresh parsley & dill
• Olive oil
• Fresh lime juice
• Salt & black pepper
• Crumbled feta *(optional)*

**How to make:**
Mix corn, tomatoes, green pepper, and herbs.
Drizzle with olive oil and fresh lime juice.
Season with salt and pepper.
Finish with feta if using.

🌿 **Fasting-friendly option:**
Skip the cheese and add a little extra olive oil or a spoon of tahini for richness.

🍅 Simple Minced Clams in Tomato Sauce 🐚
Comfort fo 🍅 Simple Minced Clams in Tomato Sauce 🐚
Comfort food, pantry-friendly, and perfect over rice or pasta.
Ingredients:
• 4 cans (6.5 oz each) minced clams
• 1 can (28 oz) crushed tomatoes
• 2 tbsp olive oil
• 1 medium onion, diced
• 4 garlic cloves, minced
• Red pepper flakes, to taste
• 1 tsp dried oregano
• 1 tsp dried parsley
• Salt & pepper, to taste
• Squeeze of lemon juice (optional)
To serve: white rice or pasta 🍝
How to make:
1️⃣ Heat olive oil in a sauté pan. Add onion and cook until soft and translucent.
2️⃣ Add garlic and sauté for 1–2 minutes, until fragrant.
3️⃣ Stir in crushed tomatoes and cook for 5 minutes.
4️⃣ Add minced clams — I use 2 cans with juice and 2 drained.
5️⃣ Season with salt, pepper, red pepper flakes, oregano, and parsley.
6️⃣ Cover and simmer on low for 10–15 minutes so all the flavors come together.
7️⃣ Finish with a squeeze of lemon if you like a little brightness 🍋
Simple, nourishing, and so satisfying 🤍

Green lentils patties.. Simple ingredients and so Green lentils patties.. Simple ingredients and so delicious 🤤 

2 cups green lentils (soaked overnight)
1.5 cup cooked white rice
1 (0.5cup) medium onion
1/4 cup fresh herbs (dill, parsley, or cilantro)
1 pinch nutmeg
Salt and pepper to taste
Oil for cooking

In a food processor, blend the soaked lentils and onion until well combined.
Transfer the mixture to a bowl and add the cooked rice, chopped herbs, salt, pepper, and nutmeg. Mix thoroughly using your hands.
Form the mixture into round patties, pressing firmly to ensure they hold together.
Heat oil in a pan over medium-low heat. Carefully place the patties in the pan and fry covered for 5-6 minutes on each side until golden brown. Tip: Avoid high heat, as the patties may cook too quickly on the outside while remaining undercooked inside.
Transfer to a plate and enjoy immediately! These are best served hot.

3-4 medium size eggplants
Sweet onion
1 tbsp tomato paste 
3 medium tomatoes 
1 bell pepper
Fresh garlic
Dill
Salt, pepper to taste.
This recipe is pretty straightforward: roast eggplants at 375F for 40min. Let them cool after, peel and mash eggplants with fork. Meanwhile sauté onions, tomatoes, bell pepper in olive oil. Add cooked eggplants, fresh garlic, dill, salt , pepper.  Delicious 😋

Baked tofu bowl 🥣 Marinated tofu: •cubed tofu •1 Baked tofu bowl 🥣 

Marinated tofu:
•cubed tofu
•1 tsp garlic powder 
•2 tablespoons soy sauce 
• 1 tsp sesame oil 
• lemon juice
• 1 tablespoon brown sugar 
•1 tablespoons rice vinegar

Combine tofu and all ingredients together, marinate for 2 hours and bake at 425 F (convection on) for 15-20 minutes.

Assemble bowl with favorite ingredients. In the picture: steamed sushi rice, garlicky broccoli, kale and ribbon carrots.
