Instructions

Cook the buckwheat

  1. Rinse the buckwheat under cold water.
  2. Bring the vegetable broth to a boil in a medium saucepan. Stir in the buckwheat and salt. Reduce the heat to low, cover, and simmer for 15–18 minutes, or until the liquid has been absorbed.
  3. Remove from the heat and let it rest, covered, for 5 minutes. Fluff gently with a fork.

Sauté the Mushrooms

  1. While the buckwheat cooks, heat the olive oil in a large skillet over medium-high heat.
  2. Add the onions and cook for about 4 minutes, until softened.
  3. Stir in the garlic and cook for another 30 seconds.
  4. Add the mushrooms in a single layer and allow them to brown without stirring for 2–3 minutes. Continue cooking for another 6–8 minutes, stirring occasionally, until the mushrooms are deeply golden and their moisture has evaporated.
  5. Add the soy sauce and thyme, then season with salt and freshly ground black pepper.

Assemble

  1. Divide the warm buckwheat among serving bowls.
  2. Top generously with the sautéed mushrooms and finish with fresh parsley.
  3. Serve immediately while warm.

Note

Tips

  • A blend of mushrooms gives the best depth of flavor.
  • For extra richness, finish with a drizzle of good-quality extra virgin olive oil.
  • Add toasted walnuts for crunch or caramelized onions for additional sweetness.
  • Leftovers keep well in the refrigerator for up to 4 days and reheat beautifully.
