Crispy Lentil and Rice Patties

In a food processor, blend the soaked lentils and onion until well combined.

Transfer the mixture to a bowl and add the cooked rice, chopped herbs, salt, pepper, and nutmeg. Mix thoroughly using your hands.

Form the mixture into round patties, using about 1/4 cup of the mixture per patty. Press firmly to ensure they hold together.

Heat oil in a pan over medium-low heat. Carefully place the patties in the pan and fry for 4–5 minutes per side until golden brown.

Tip: Avoid high heat, as the patties may cook too quickly on the outside while remaining undercooked inside.
